What is the fermentation ?
Fermentation is a metabolic process of yeast that produces chemical changes in organic substances through the action of enzymes. The fermentation process in the beverage production industry is based on the extraction of energy from carbohydrates in the absence of oxygen, that is an efect of yeast biological metabolism . It is a process in which the activity of microorganisms brings about a desirable change to a foodstuff or beverage to get a required beverage with desired taste, percent volume of alcohol, colour, foamicity and other chemically measurable or only sensory perceived properties.
